As time becomes more precious by the minute, there are occasions when the thought of making and rolling out pastry becomes just too much. Well, if you like the spicy flavour of mince pies for the Christmas caller, try this recipe as a quick festive alternative.


225g/8oz mincemeat
2-3dssp brandy
rind of an orange
170g/6oz self-raising flour
1/4tsp salt
55g/2oz soft brown sugar
85g/3oz softened butter
1 egg   200ml/ 7fl oz milk
30g/ 1oz nuts
30g/ 1oz demerara sugar

To decorate
55g/2oz icing sugar
1tsp cinnamon powder

Makes 12 large or 24 small muffins

Add a touch of extra flavour to the mincemeat by mixing in the brandy and orange peel. Leave to sit while you make the basic mixture.

Sieve the flour and salt into a bowl and then add the soft brown sugar. Next, in with the mincemeat and the butter slightly softened, either in a microwave or by beating. Mix lightly and add the lightly beaten egg and milk, mixing as little as possible otherwise the muffins will become hard on top. When the mixture is soft enough to drop off the edge of a spoon, then transfer to lined cases inside the muffin tin.

Sprinkle the top of the muffins with chopped nuts and demerara sugar, then bake in the oven at gas mark 5/190°C/375°F for 15 minutes. When cooked, dust with icing sugar and cinnamon mixed together.
