Monday Lunch

Monday lunches very often consist of meat left over from Sunday's roast - ''rechauffés" the French call them: dressed up dishes made from pre-cooked meat. All sorts of cooked meats are used: lamb, mutton, beef, veal, pork, ham, poultry or game, but not in combination.

This is a meat casserole fixed the way my mother used to do it.




Serves: 4
Preparation time:20 minutes
Cooking time: 15 minutes
Ingredients: 1lb cooked meat 500g 2 cups
3 tablespoons oil 45ml 1 1/2fl oz
2 finely chopped onions
3-4 tomatoes (seeded, chopped and skinned)
pinch of cinnamon
1oz flour 25g 1/4 cup
10 fl oz stock 275ml 1 1/4 cups
4oz cooked peas 100g 2 cups
seasoning
4oz cheddar cheese 100g 1 cup
1lb creamed potatoes 500g 2 cups
paprika

Method: Cut meat into one-inch squares. Heat oil in a saucepan, fry onion for a minute over a gentle heat. Add tomatoes and cinnamon, continue cooking for a further minute. Add flour and blend well with the vegetables. Gradually add the stock, stirring continuously, add meat and peas, season to taste. Bring just to boiling point and simmer for 10 to 12 minutes. Pour the meat mixture in the centre of dish. Sprinkle with cheese and place under hot grill until golden brown. Serve with potatoes piped around the edge of the dish and sprinkle with paprika.


Watchpoints: If adding cooked meat to sauce, the sauce should be slightly warmed before the meat is put in, then the entire contents slowly brought to boiling point. If meat is put into a boiling sauce, it will toughen. Use a white sauce for white meats and a brown sauce for brown meat. Always use a well flavoured and seasoned sauce.

Garnish well. A good salad helps enhance dish.
